Who says vegan is boring?! Seriously this rich creamy dish is is a favorite that you will want to come back to again and again.

  Ingredients:

  • 2 Tablespoons oil
  • 1 onion, finely chopped
  • 5 cloves garlic, minced
  • 1-inch ginger, finely chopped
  • 2 carrots, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 cup yellow lentils, washed and drained
  • 1 tablespoon yellow curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 can coconut milk
  • 4 Cups Vegetable broth (or chicken broth if not vegan)
  • 2 Teaspoons sugar
  • 2 cinnamon sticks
  • Fresh cilantro and limes for garnish

Directions:

  1. In a large pot, heat vegetable oil over medium heat. Add chopped onions and sauté until translucent.

  2. Add garlic and ginger, sautéing until fragrant.

  3. Add the carrots and bell pepper and sauté for an additional two minutes.
  4. Stir in curry powder, turmeric, cayenne and salt, allowing the spices to bloom for a minute.

  5. Add the washed lentils and saute for a couple minutes

  6. Pour in the coconut milk, vegetable broth, sugar and cinnamon. Stir and bring the mixture to a boil, then reduce heat and simmer until lentils are tender.

  7. Simmer for an additional 10-15 minutes until the soup reaches your desired consistency. You can always add a cornstarch slurry to thicken if desired.

  8. Take out the cinnamon sticks and serve. Garnish with rice, fresh cilantro, limes and serve hot.
