Roasted Carrots with Herb Tahini Dressing

We all know the words "eat your veggies". But let's be honest, how many veggies do you usually eat in a day. Do you get the reccommended 3-5 servings every day?

Most people don't. When asked why they don't eat more veggies, the top answers are "I don't have time", "It's too much work", and "I don't really like the taste".

Well my friends, we are here to provide you with a quick, easy, TASTY recipe for some roasted carrots, so you have absolutely no excuses to enjoy some veggies tonight. I love collaborating with friends on Instagram, and when I got to talk with Meg at CurlywithCravings, I was so excited to share her recipe here!

Carrots are rich in beta-carotene and vitamin A for eyes and skin, vitamin K and calcium for bone health, and can even lower your risk of diabetes. At Mora Ceramics, we are all about self care, so we are all about eating carrots for good health.

What Even is Tahini?

You've probably heard it before, but do you know what Tahini is made of?

If you answered sesame seeds, oil and salt, then you have some culinary knowledge!

As far as nutrition goes, tahini is a solid source of protein, fiber, monounsaturated fats, and vitamins B1 and B2. Tahini is a perfect way to add more nutrients into a balanced diet for the ultimate self care of body and mind.


Without further ado, let's get right into the recipe! Here are the ingredients you need.

Ingredients:

1½ lbs carrots, peeled, and cut in half

1 ½ tbsp olive oil

1 tsp dried dill

¼ tsp salt

1/8 tsp pepper

 

Herb Tahini Dressing:

1/3 cup tahini

1/3 cup lemon juice

1/3 cup water

½ cup fresh parsley

Salt and pepper to taste

1 tbsp olive oil

½ - 1 tsp red pepper flakes

Directions:

1. Preheat oven to 400 F. Line your baking sheet with parchment paper.

2. Wash the carrots and cut the ends. Pour them in a large bowl and toss with olive oil, dried dill, salt, and pepper. Spread the carrots evenly across the baking sheet, leaving room between each of them.

3. Bake for 20-25 min, or until they reach your desired tenderness.

4. In the meantime, make the dressing by combining all of the ingredients in a food processor and pulsing until smooth.

5. Drizzle the dressing on the carrots and enjoy!
